Leven resident and hospitality lecturer Fiona Milne has won a scholarship to work alongside staff at one of Scotland’s most prestigious hotels, the Balmoral in Edinburgh.

Ms Milne (left), a lecturer in hospitality at Adam Smith College, will spend a week at the five-star hotel, funded by the Hospitality Industry Trust, a Scottish-based charity which raises funds to support and encourage excellence in the hospitality industry.

She has previously won a HIT scholarship to take on a placement at the Andrew Fairlie Restaurant at the Gleneagles Hotel.

Ms Milne said: “I was delighted to hear I had been lucky second time around. The standard of applicants is high, with the majority of people coming from the best hotels and restaurants in Scotland.

“The Balmoral is world renowned for five-star luxury and I am looking forward to spending a week there, shadowing the hospitality and accommodation managers.”

“I think it is extremely important that lecturers such as myself forge strong links with their industry and keep up-to-date with the latest technologies and advancements, which can then be passed on to our students.”

Bryan McCabe, department manager for hospitality and fashion, said: “Fiona is an excellent member of staff who is passionate about her work and is a great role model to her students. We are delighted; she truly is a worthy recipient.”
