Doors opening to new artisan bakery in Fife town

Burntisland’s wealth of independent traders is to get another boost soon, with the launch of an artisan bakery.

A husband and wife team is gearing up to open Sunrise Bakehouse on the High Street as early as April.

Hajni Vasilescu and her husband Liviu have already been making bread for Woodlea Stables near Crossgates, but now want to open their own store.

The bakery will be the latest small trader to hit the town’s retail centre, which is already being hailed as a shining model of success to other high streets on account of its high number of independent businesses.

The shop needs a little renovation before the couple can open, so it will be a number of weeks before they begin trading.

Hajni said: “We wanted this for so long.

“We just really like what we do and we like to do it well. 

“We’re planning to open either the end of April or the beginning of May.

“When you have long-fermentation bread like sourdough, it’s a long process, about 24 hours, and it makes it more digestable and is healthier and doesn’t have any commercial yeast.

While there are two chain bakeries on the High Street, Haijni says that Sunrise aims to offer something different. 

“We’re going to make everything by hand.

“It’s going to be an open-plan bakery so when you come in you’ll be able to see how we make the bread.

“We are going to make French tarts, brioche, cinnamon buns, things like that.

“Burntisland’s a good place. I think there is a lot of potential there. 

“Burntisland already has a lot of independent shops.

“When we went in to one, they said a bakery was missing, so we were hoping to find a place there and then this shop came up. 
“The shops there all support each other and we’re hoping to do that as well.”
