Wine, whisky and cigars sampling venue revealed for St Andrews premises

A new wine, whisky and cigar sampling venue could be created in St Andrews if a planning application submitted to Fife Council is approved.

Permission is being sought to transform the courtyard and garden behind the existing Luvians shop on Market Street.

The proposal would see the creation of indoor and outdoor spaces for private tasting events at the C-listed premises.

According to a design statement submitted on behalf of the applicant, the proposal includes an “intimate” tasting room with a serving counter and display storage, created within an existing space with access from Crail’s Lane.

A covered terrace is proposed at the northern end of the courtyard, providing space for seated private wine tastings and gatherings beneath a “translucent canopy” supported by timber beams.

There would also be an open terrace to provide flexible space for larger functions during the summer, with built-in timber benches around the area.

A small bothy-like pavilion would also be created where whisky tasting and cigar sampling could take place.

The planning statement explained: “This pavilion would provide intimate, covered space ancillary to the external terrace, or an area for up to 10 people to enjoy exclusive tastings.

“Simple materials and the small scale echo traditional bothy architecture. Louvered gables to the pitched roof promote airflow designed to draw cigar smoke upwards and away from occupants.

“The carefully designed and detailed masonry hearth and chimney structure will form a sculptural focal point to the space, whilst grounding the structure.

“A fire in the hearth will extend the season and create an atmosphere conducive to the enjoyment of the high-end products.

“This element, extended on its north side by a bench and counter top, will also engage the adjacent terrace, providing a space for a sommelier to address groups.”

The statement acknowledged that the existing character of the spaces reflected the “rich heritage” of the historic town centre location.

It added: “Retention of what is positive and rich within the existing space will underpin a new events space with authenticity.

“Through the creation of a series of small interconnecting terraces with varying qualities and character, a beautiful environment is established to accommodate high-quality functions and a range of intimate private events aligned to the Luvians brand.”

Councillors will consider the application in due course.
